  1. 4 Medium Eggs, beaten
    1/4 Cup Black beans
    2 T Green Bell Pepper
    1/4 tsp Garlic powder
    2 T Jack Cheese
    4 T Tomato, fire roasted
    1/4 tsp Chili powder
    1/4 tsp Cumin
    2 tsp Onion powder


    1. Combine tomato, chili powder, cumin, and onion powder. Set aside.
    2. Combine eggs, black beans, green pepper, garlic powder, and cheese.
    3. Cook until eggs are set and pepper is tender.
    4. Served in a single compartment tray with eggs on the bottom and tomato salsa on top.
