Ingredients:

  1. Coleslaw:
    Half a head of red cabbage, chopped finely
    ¼ cup onion (red or sweet), chopped finely
    1 green bell pepper, de-ribbed and chopped
    1 tablespoon fresh mint leaves, chopped finely

    Dressing:
    2 tablespoons Dijon mustard
    ¼ teaspoon salt and fresh-ground pepper to taste
    4 drops Tabasco sauce
    1/3 cup apple cider vinegar
    ¼ cup olive oil

Directions:

    1. Mix together all ingredients for the slaw and set aside.
    2. To make the dressing: whisk ingredients together in a bowl, or pour into a large jar, close the lid tightly, and shake until well blended.
    3. Pour the dressing over the slaw and mix well.
