Ingredients:
- 8-10 medium yams
1 cup brown sugar
1/4 cup butter
1/2 cup orange juice
2 teaspoons salt
1 orange sectioned
1 teaspoon grated orange peel
Directions:
- Boil yams until tender.
- Drain, peel and cut into halves.
- Mix brown sugar, butter, orange juice and grated rind in a heavy skillet.
- Heat slowly while stirring.
- Simmer yams a few at a time in mixture.
- Place in baking dish and put into a warm oven.
- Simmer orange sections for 2 or 3 minutes.
- Arrange yams in a serving dish and garnish with orange sections. (you can also arrange yams in a baking dish and pour mixture over yams and bake slowly for several minutes)
