Scrumptious Orange Candied Yams Recipe

This recipe is usually made for Thanksgiving or other holiday celebrations, but orange candied yams is a quick and simple dish to make anytime. With a full bodied orange flavor who could resist this any day of the year?

  1. 8-10 medium yams
    1 cup brown sugar
    1/4 cup butter
    1/2 cup orange juice
    2 teaspoons salt
    1 orange sectioned
    1 teaspoon grated orange peel


    1. Boil yams until tender.
    2. Drain, peel and cut into halves.
    3. Mix brown sugar, butter, orange juice and grated rind in a heavy skillet.
    4. Heat slowly while stirring.
    5. Simmer yams a few at a time in mixture.
    6. Place in baking dish and put into a warm oven.
    7. Simmer orange sections for 2 or 3 minutes.
    8. Arrange yams in a serving dish and garnish with orange sections.  (you can also arrange yams in a baking dish and pour mixture over yams and bake slowly for several minutes)
