Ingredients:
- 3 cups Fresh Yams, Washed
1 Sweet Red Onion
2 teaspoons Olive Oil
1 tablespoon Soy Sauce
Directions:
- Preheat oven to 350 degrees.
- Peel yams and sweet red onion.
- Cut yams and sweet red onion into 2 inch cubes (bite size) and brush lightly with olive oil.
- Place yams and onions on baking sheet or jelly roll pan. The sides of the jelly roll pan prevent the yams from falling off the sides.
- Roast the vegetables for 30 minutes or until tender.
- Sprinkle with soy sauce if desired.
- Serve.
