1 very ripe avocado, small diced
5 ounces salad greens, washed and spun dry
1/2 red bell pepper, diced
1/2 small sweet red onion, thinly sliced
1 small basket (1 dry pint) cherry or grape tomatoes
3/4 cup toasted walnuts
1 tablespoon grated Parmesan cheese Freshly ground pepper, to taste
- Combine avocado, salad greens, red pepper, red onion and tomatoes in an extra-large bowl.
- Toss the salad liberally so that the avocado breaks down and lightly coats all the vegetables. You shouldn't be able to pick out any avocado pieces when you're done tossing.
