Drizzle this dressing over grilled chicken, greens, and tomatoes for a quick and delightful lunch. The dressing is quick to make and will compliment just about any kind of salad greens and vegetables (it would actually make a fabulous dip too!).

Ingredients:

  1. 4 chicken breasts, grilled and sliced
    5 ounces baby romaine leaves
    15 cherry tomatoes, cut in half
    Dressing:
    3 cloves garlic
    4 tablespoons olive oil
    1 avocado
    2 tablespoons lemon juice
    1/4 cup greek yogurt
    3/4 teaspoon salt

Directions:

    1. Puree all Dressing ingredients in a blender.
    2. Arrange grilled chicken slices, salad, and cherry tomatoes on individual plates.
    3. Drizzle dressing over salad greens, tomatoes, and chicken.
    4. Top with freshly ground black pepper.
    5. Enjoy!
