Nutritional Information (per serving)
Ingredients:
- 2 cups Forbidden Rice
3 1/2 cups Cold Water
1/2 cup diced yellow peppers
1/3 cup Tamari
1/3 cup Toasted Sesame Oil
1 pound roasted diced sweet potato (optional)
1/2 cup diced red peppers
1/2 bunch sliced scallions
Salt and Pepper to taste.
Directions:
- Rinse rice in cold water. Add rice and water to a 3 quart pot with tight fitting lid. Bring rice to a boil, cover and lower heat to a simmer for 30 minutes or until water is absorbed.
- Remove heat and allow rice to sit for 3-5 minutes. The rice should look dry.
- Whisk together Sesame Oil and Tamari.
- While rice is still warm toss in the sesame oil and tamari mixture.
- Let cool, then add roasted sweet potatoes, red peppers, yellow peppers and scallions.
- Add salt, pepper to taste.
