Ingredients:
- 2 to 3 pounds lean lamb, cut in 1- inch cubes
1 red pepper cut in 1-inch cubes
1 green bell pepper cut in 1-inch cubes
1 yellow bell pepper cut in 1-inch cubes
1-cup pineapple juice
¼ cup low-sodium soy sauce
2 teaspoons minced garlic
2 tablespoons orange juice concentrate
1/3-teaspoon white pepper
Directions:
- Soak wooden skewers in water about 30 minutes before use to prevent buckling or burning.
- Assemble lamb, onion, and peppers on skewers, alternating meat and vegetables.
- Place in a large pan or Ziploc bag.
- In a small bowl mix pineapple juice, soy sauce, garlic, orange juice concentrate, and white pepper.
- Pour marinade over kabobs.
- Cover pan or close bag, place in the refrigerator for at least an hour, turning periodically.
- Cook kabobs on the grill or in the broiler and brown all sides.
