Delicious Lamb Kabobs Recipe

These kabobs go great with brown or wild rice pilaf.

  1. 2 to 3 pounds lean lamb, cut in 1- inch cubes
    1 red pepper cut in 1-inch cubes
    1 green bell pepper cut in 1-inch cubes
    1 yellow bell pepper cut in 1-inch cubes
    1-cup pineapple juice
    ¼ cup low-sodium soy sauce
    2 teaspoons minced garlic
    2 tablespoons orange juice concentrate
    1/3-teaspoon white pepper


    1. Soak wooden skewers in water about 30 minutes before use to prevent buckling or burning.
    2. Assemble lamb, onion, and peppers on skewers, alternating meat and vegetables.
    3. Place in a large pan or Ziploc bag.
    4. In a small bowl mix pineapple juice, soy sauce, garlic, orange juice concentrate, and white pepper.
    5. Pour marinade over kabobs.
    6. Cover pan or close bag, place in the refrigerator for at least an hour, turning periodically.
    7. Cook kabobs on the grill or in the broiler and brown all sides.
