  1. 1 1/2 cup Zuchini
    1 Green Bell Pepper
    1 Red Bell Pepper
    1 Red Onion
    8 Cloves Garlic
    1 teaspoon Oilve Oil
    1/2 teaspoon Oregano
    1/2 teaspoon Thyme
    1 teaspoon Basil


    1. Slice zucchini about 1.4 inch thick.
    2. Cut peppers and red onion into bite chunks.
    3. Peel garlic cloves and cut in half lengthwise.
    4. Place all the cut vegetables in a large bowl. Add spices and olive oil. Stir to mix.
    5. Cover bowl and set aside until ready to grill -- you can grill immediately or prepare up to 12 hours in advance.
    6. Heat grill to high. You can use an outdoor grill, indoor grill, heavy cast iron griddle or skillet. The grill leaves the attractive charred stripes on the veggies, but you don't need the stripes to get the great grilled flavor.
    7. Grill until vegetables are tender and edges are blackened about 5 -6 minutes per side.
