This is a quick and easy salad that’s flavorful, healthy and delicious.  It’s also a colorful addition to your dinner table and pretty enough for a fancy party.

  1. 1/4 cup fresh lime juice
    2 tablespoons olive oil
    2 tablespoons honey
    1/2 teaspoon freshly ground pepper
    1/4 teaspoon salt
    2 cups sliced fresh strawberries
    1 large avocado, diced
    1/4 cup sliced green onions
    1/3 cup chopped fresh cilantro
    4 cups fresh arugula


  1. Whisk together lime juice, olive oil, honey, pepper, and salt. Add everything else except arugula and toss well. Place arugula on a serving platter and top with strawberry/avocado mixture.
