Ingredients:
- 4 medium zucchini, shredded and drained
3 medium red onions, chopped
1 clove garlic, minced
2 eggs, lightly beaten
½ teaspoon sea salt
¼ teaspoon cayenne pepper
1/3 cup feta or farmer’s cheese, crumbled
2 tablespoons flour
½ teaspoon oregano ½ teaspoon basil
Directions:
- Combine the zucchini with onions, garlic, eggs, salt, pepper, cheese, flour oregano, and basil.
- Mix well.
- Over medium-high heat, prepare a nonstick skillet with nonstick butter-flavored spray.
- Drop zucchini mixture by one tablespoon at a time (this makes a small pancake).
- Cook about one minute, then turn over to brown on other side, about one minute.
- Serve immediately or freeze.
