A great way to top off that Thanksgiving feast.  They will always save room for pumpkin pie.

  1. 1 ½ cup soymilk
    4 tablespoons cornstarch
    1 ½ cup cooked pumpkin
    ½ cup raw sugar or other sweetener
    ½ teaspoon salt
    1 teaspoon ground cinnamon
    ½ teaspoon ginger
    1/8 teaspoon ground cloves
    1 9-inch unbaked pie shell


    1. Preheat the oven to 375 degrees.
    2. In a large bowl, whisk together the soy milk and cornstarch until smooth, then blend in remaining ingredients.
    3. Pour into pie shell and bake for 45 minutes or until firm.
    4. Cool before cutting.
