Ingredients:
- 1 ½ cup soymilk
4 tablespoons cornstarch
1 ½ cup cooked pumpkin
½ cup raw sugar or other sweetener
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ginger
1/8 teaspoon ground cloves
1 9-inch unbaked pie shell
Directions:
- Preheat the oven to 375 degrees.
- In a large bowl, whisk together the soy milk and cornstarch until smooth, then blend in remaining ingredients.
- Pour into pie shell and bake for 45 minutes or until firm.
- Cool before cutting.
