This refreshing green smoothie is a great post workout drink. It is hydrating, full of good greenness and a nice little dose of fat. I like to think of it as a green Piña Colada, or a “Greeña Colada.” I feel so healthy drinking it!

Ingredients:

  1. 1 large cucumber, peeled and chopped
    ¼ cup water
    ½ cup parsley
    ½ cup frozen pineapple chunks
    1 tablespoon coconut oil
    5 drops stevia
    4 ice cubes

Directions:

    1. Place cucumber and water in a Vita-Mix (or other high speed blender) and process on high until liquid
    2. Add parsley, pineapple, coconut oil, stevia and ice and blend until smooth
    3. Serve
