Chocolate Roulage Jelly Roll Cake Recipe

A classic recipe for a chocolate jelly roll cake. Fun to make, and chocolatey as ever! The hint of coffee helps this cake from feeling too sweet.

  1. 6 Large Eggs (separated)
    1 cup Organic Sugar
    10 oz Semi Sweet Chocolate Chips (melted)
    2 TBS. Prepared Coffee


    1. Beat egg yolks.
    2. Add sugar and beat until smooth.
    3. Add melted chocolate and blend until smooth.
    4. Blend in prepared coffee.
    5. In separate bowl beat egg whites until very stiff.
    6. Fold egg whites into chocolate mixture.
    7. Pour into prepared jelly roll pan.
    8. Cook in preheated oven at 350 degrees for 20 min or until crusty.
    9. IMMEDIATELY turn cake onto tea towel or waxed paper covered in Cocoa.
    10. Let Cool.
    11. Cover cake with sweetened whipping cream.
    12. Roll lengthwise and place on cake plate.
    13. Chill or Freeze for firmness.
