  1. 5 large eggs
    2 Tbsp. half & half
    3/4 cup cottage cheese (regular or lowfat)
    1/2 cup shredded cheddar cheese


    1. Preheat oven to 450°F and spray or butter an 8-by-8 baking dish.
    2. In a medium bowl, thoroughly whisk together eggs, half & half and cottage cheese together.
    3. Pour mixture into the prepared baking pan.
    4. Sprinkle cheddar cheese over the mixture.
    5. Bake for about 20 minutes until the top is lightly browned.
