What to do with Thanksgiving Leftovers

It’s the day after Thanksgiving. You’re tired. The kids are hungry, and you are uninspired, but your fridge is full of leftovers. Here are some ideas beyond the obvious take 2 of Thanksgiving dinner.

  1. Turkey: What do you make beyond turkey sandwiches, which everyone gets sick of in a day or two? You can use slices of turkey in many other dishes, such as enchiladas, tacos, wraps, stews, and even chili. Be creative! Here are more ideas and recipes from Real Simple.


  2. Mashed Potatoes: Can you say latkes? These are super delicious and fun to make with the kids. In addition, you can sneak all sorts of other vegetables into these and your kids will barely notice. I usually add some shredded zucchini when I made latkes. They get to dip them in ketchup, so that usually makes it all good for them.


  3. Bread: Leftover bread can be made into breadcrumbs, croutons, and used in French toast, or my Christmas morning favorite, an egg strata.

Move over leftover

I admit before kids the day after Thanksgiving I was out shopping and so tired that I would either order a pizza or make a turkey sandwich. Now it's the next day & my family is bored with the reheat and eat. A few years ago I turned leftovers into an amazing shepherds pie. It was everything but the kitchen sink! I cooked a few leftover pieces of bacon, reserved some fat (healthy right) then sautéed some onion with carrots. Added some seasoning and poultry season with worcestershire sauce, leftover cooked veg (in the past I've used mushrooms, corn, green beans,or peas). Leftover stuffing can be added with a few cups of chopped turkey. Add about 1 tbsp flour & then about a cup or so of broth and heat til thick. In the paste of also used a few tbsp of tomato paste or leftover cream for richness. Poured in a casserole dish topped with leftover mashed potatoes and sprinkled with cheese. Broiled until golden. It sounds hodgepodge but it took less than 30 minutes, was flavorful, I didn't have to shop for any ingredients and my family loved it (oddly this tastes better day two & they actually like it as a leftover). There are so many ways to reuse leftovers. Try a casserole, a tetrazzini (sp), turn turkey into an awesome buffalo "chicken" dip, enchiladas, a hearty soup, pulled bbq style sandwiches, potpie, turkey spinach phyllo pie or a cheesy hashbrown bake. The possibilities are endless. Just experiment and enjoy! Btw this year our daugter will turn 6 the day after and requested sushi and cupcakes. I doubt I'll have to worry about making that into leftovers;)
