Fiber for Dad

Domenica is the national spokesperson for the Organic Trade Association’s national campaign, “Go Organic! for Earth Day.” She is a recurring judge on Iron Chef America, a guest on CBS News, “Oprah and Friends,” with Dr. Oz on XM radio, and has been featured in Vegetarian Times, Kiwi Magazine, and Oprah.com. She was a featured chef on Fox News in Houston for years on the "Fox Grill," educating viewers with her ingenuity and humor. Celebrities such as Oprah Winfrey, Julia Roberts, Thandie Newton, and John Travolta have enjoyed her food.

Fiber, hmmmm, it should be a four letter word. It seems to evoke feelings of guilt (I’m not getting enough) and the blahs (I always envision a heaping tablespoon of a brown and powdery substance). We need it, and especially you, dads. How do you get more without feeling like it's a mandate from the doctor or pharmacist?

You can start your day with Super Cereal, for one!. This recipe is packed with fiber from all different sources...quinoa, oats, flax. Cook it up with a bit of orange juice and you have a completely unexpected flavor sensation. Fiber can be fun, fast and fantastic!

Tip: Soak steel cuts oats overnight to cut cooking time in more than half.

Recipe: Super Cereal

Super Cereal

Serves 4

Ingredients:
1 ½ cup organic rolled oats (if using quick oats see note at bottom)
½ cup organic quinoa, rinsed
4 cups water (or you can do ½ water and ½ milk or soy milk)
1 tablespoon ground flaxseed
Pinch of salt
½ teaspoon cinnamon
*Dried fruit and honey (*optional)

Process:

  1. Place all ingredients (except flaxseed, dried fruit and honey) in a pan and bring to a boil.
  2. Reduce heat and simmer for 12-15 minutes.
  3. Remove from heat and stir in flaxseed.
  4. If using, serve with dried fruit and honey

*If using quick oats start with the quinoa and liquid. Add the oats after the quinoa has cooked for 10 minutes and cook for 5 more minutes.
