Boosting Diets with Organic Veggies and Fruits

Domenica is the national spokesperson for the Organic Trade Association’s national campaign, “Go Organic! for Earth Day.” She is a recurring judge on Iron Chef America, a guest on CBS News, “Oprah and Friends,” with Dr. Oz on XM radio, and has been featured in Vegetarian Times, Kiwi Magazine, and Oprah.com. She was a featured chef on Fox News in Houston for years on the "Fox Grill," educating viewers with her ingenuity and humor. Celebrities such as Oprah Winfrey, Julia Roberts, Thandie Newton, and John Travolta have enjoyed her food.

Dads, boosting up your diets with organic veggies and fruits doesn't have to be difficult. Remember that many of the nutrients found in fresh produce help, not only to increase energy and vitality, but also to prevent cancer. It is too easy to get through an entire day with out having enjoyed a fresh piece of fruit or a salad. It's no different for dads than for moms—we get busy, stressed, and we neglect the nutritious fuel we need to put into our bodies.

One of the simplest ways to ensure that you get some veggies in your diet is, one of my favorite recipes/tips.

Salt, pepper, olive oil, heat.

Just these few ingredients, a very hot oven (450 degrees), and MINIMAL cook time and you will find yourself (and your family) enjoying asparagus in 5-7 minutes, falling in love with Swiss chard or kale (oh you think that sounds crazy, but just you wait). Trust me, try it, and see how you feel.

Recipe: Balsamic Roasted Chard

Balsamic Roasted Chard

Heat oven to 450 degrees

Ingredients:
1-2 heads Swiss chard, chopped in 1-2 inch strips with tough ribs removed
Extra virgin olive oil
Kosher salt
Balsamic vinegar

Process:

  1. Lay chopped chard out on a sheet pan. 
  2. Drizzle with extra virgin olive oil until chard is lightly coated.
  3. Sprinkle with Kosher salt.
  4. Roast for approximately five minutes.

Remove and drizzle with balsamic
