Tomatoes are a man’s next best friend. High in lycopene (especially when cooked), it has been referenced in reducing the risk of heart disease. The great news is that cooking with tomatoes is so simple—not to mention DELICIOUS. So, pack more lycopene into your meals! My basic tomato sauce couldn't be easier to make and can be used on everything from pasta, to chicken, to pizza. Folding in some delicious, organic stewed tomatoes to your favorite stew, soup or chili will also give you an instant punch of flavor and a high dose of lycopene.

Tip: Use organic tomatoes and San Marzano tomatoes whenever you can; always use a high-quality extra virgin olive oil when there are few ingredients—it makes a difference!
Recipe: Basic Tomato Sauce
Basic Tomato Sauce
Ingredients:
2 tablespoons extra virgin olive oil :
4-5 cloves garlic, minced (not too small) :
½ teaspoon red chili flakes :
25-28 oz. canned or jarred Italian tomatoes, preferably organic:
Dash of salt:
1 lb. of pasta:
1/3 cup fresh basil, Italian parsley, or a combo of the two, chopped:
Fresh Parmesan cheese, grated :
Process:
- Sauté garlic and chili flakes in the extra virgin olive oil. DO NOT let the garlic get brown.
- Add tomatoes and a pinch of salt, simmer for 15 minutes.
- Bring a large pot of salted water to a boil.
- Add pasta and cook until al dente.
- Drain pasta (DO NOT rinse) and toss with sauce. Add parsley and basil and finish with Parmesan cheese.
